Vegan Gluten-free Chocolate Shaving Strawberry Cookies

This cookie recipe was what I would call a lucky happenstance. I didn’t intentionally go out to make chocolate strawberry cookies, but the fresh strawberries were whispering my name from the inside of my fridge, so I just knew I had to do something about it.

Initially my intent was to create a vegan chocolate chip loaf, but that plan immediately got deflated when I recalled that I burned my only cake pan with a veggie burger cooking incident (don’t ask).

So, you combine a gluten intolerant roommate, a vegan, some fresh strawberries, melting hot cocoa chocolate, the undying need to give your coffee a friend, and this is what you get. These cookies create an amazing marriage with a hot cup of coffee or latte.

Vegan Gluten-free Chocolate Shaving Strawberry Cookies
Yields about 18 cookies
Recipe adapted from Rabit Food cookbook
1 3/4 cups gluten-free vegan pancake mix
1/2 cup agave
1/2 cup unsweetened apple sauce
1 tbsp. gluten-free vanilla extract
1/4 tsp. baking soda
dash of salt
1/4 tsp. xanathan gum
2 tbsp. water
1/2 – 1 cup chocolate shavings
1 cup chopped strawberries

Preheat your oven to 325 degrees Fahrenheit. Mix together your agave, unsweetened apple sauce, and water. Next add your pancake mix, baking soda, xanathan gum, and salt. Mix together until combined.

Gently fold in your chocolate shavings and strawberries. On a prepared baking sheet, use a spoon to drop spoonfuls of the batter onto the sheet.

Baking cookie dough for 8-13 minutes. The edges will be golden brown. Remove baked cookies from oven and allow to cool for 5-10 minutes before removing with a thin spatula and consuming.
